There is only one 900 year old castle in the lee of the beautiful Sussex South Downs which is an award-winning country house hotel. The Bishopric, created from two 17th century buildings within the dry moat, now offers a choice of five suites, all with private lounges. The Queens Room, a handsome barrel-vaulted room, is so named for its 17th century mural depicting King Charles II and his queen, Catherine of Braganza, who visited Amberley Castle in the early 1680s. It is the perfect setting for Castle Cuisine which reflects historical recipes and local ingredients in a contemporary style. To complement the excellent food, the Castle's wine list is both extensive and interesting.
